Ma is the numbing tingle of Sichuan peppercorn; la is chili heat. It is a dry stir-fry where you pick your protein and vegetables and everything gets tossed in the same chili oil. Unlike hot pot, there is no broth. Ours arrives as the marinated meat; the vegetables are up to you.
